In the 1970's, cashew trees were introduced into the province of Choluteca, the poorest province in Honduras, because the severely-eroded soil made it difficult to produce enough food to feed the villagers. The cultivation of cashew nuts provided the jobs so desperately needed. Working with Houston-based Pueblo-to-People (now defunct),members of peasant cooperatives planted thousands of cashew trees. APDP (Projects for the People Association) helped develop a cashew-processing technique which is safe, relatively inexpensive, and environmentally sustainable. The cashews are hand-picked, certified organic by Bio Latina, and roasted in adobe ovens which are fueled by dry cashew shells. Just Cashews, the original Pueblo-to-People partner in Albuquerque, New Mexico, is a non-profit importer of cashews and member of the Fair Trade Federation.
